Easter delicacies - mastered by Hilly Billy Boys and Wineman

Easter time, after good Friday and Holy Saturday, allows to enjoy about different dishes with taste and aromas. Smoke is common for subsequent dishes. There is a remote place in Central of Finland near Kuopio area where dedicated, middle-aged men are carried out with smoked meat. They have special smoke sauna for that intention. It will take about 24 hours to bake the meat properly when the results are unmatched. On the other hand in Västinniemi there is a country house where Viinimies is smoking traditionally whitefish.
Salted meat parts are covered wit net to to stick together and then left to smoke sauna to become smoked.
Strong and smoky meat needs proper wine like Double Barrel Cabernet Sauvignon or Shiraz. Wines get extra aromas when finished in aged whiskey barrels.

Whitefish will get its smoky cover and aromas when it is smoked in smoke oven over open fire.
Smoky whitefish and wines with oaky aromas have balanced pairing. On the other hand vegan, fruity, acidic wines match also nicely with elegant whitefish. Grand Gru Riesling is a premium choice with aromatic fish.
