Maa-artisokka on maan mahtava mukula

Maa-artisokka on mieluinen viljelykasvi puutarhurille. Sen kasvukausi on pitkä. Juurimukuloita voi hyödyntää ja nostaa maasta vaikka seuraavana keväänä. Maa-artisokka on myös arvostettu raaka-aine keittiössä, niin arkisessa aterioinnissa kuin juhlavassa kattauksessa. 
 
Maa-artisokka kasvaa multavassa ja hiekan sekaisessa maassa. Sen mukulat istutetaan harvaan, noin puolen metrin päähän toisistaan. Kasvi kasvattaa korkean varren, jonka päässä on auringonkukkia muistuttavat kukinnot. Sen juurimukulat ovat vaihtelevan muotoisia ja muhkuraisia. Kypsytettyjen mukuloiden maku on samenttisen pehmeä joka johtuu maa-artisokan sisältämästä inuliinista.

 Maa-artisokan toinen nimi, mukula-artisokka, kuvaa hyvin juureksen olemusta.

Maa-artisokka on satoisa lajike, joka tuottaa istutettua mukulaa kohden helposti kymmenkertaisen sadon.

Maa-artisokkakeitto, 4 hengelle:
450 g maa-artisokkaa
1 peruna
1 rkl voita
1 sipuli silputtuna
1,5 tl merisuolaa
2 dl vispikermaa

Kuori maa-artisokat, leikkaa ne pieniksi paloiksi ja laita sitruunamehulla maustettuun veteen, jotta ne eivät tummu. Kuori ja paloittele peruna. Kuullota juurespalat voissa kattilassa. Lisää kylmä vesi niin, että juurekset juuri peittyvät. Lisää sipulisilppu ja kiehauta 15─20 minuuttia kunnes ainekset ovat pehmeitä ja kypsiä. Mausta merisuolalla ja soseuta keitto nopeasti. Lisää lopuksi kerma ja kuumenna keitto, mutta älä anna kiehua.
 
Mausta keitto mausteöljyllä, savuporotahnalla tai rapeilla tattipalasilla.
 
Mausteöljy:
0,5 dl oliiviöljyä
0,5 dl tuoretta persiljaa
Tee mausteöljy sekoittamalla persiljasilppu ja oliiviöljy sauvasekoittimella.

Tee savuporotahna sekoittamalla ohuita siivuja kypsästä poronpaistista ja creme fraichea.
Mausta rosepippurilla.

Tee tattilisuke paistamalla tattipalat rapeiksi voissa ja kuivaamalla talouspaperin päällä.

Prosecco sopii hienostuneen maa-artisokkakeiton kumppaniksi.

Maa-artisokka on todellista syysruokaa. Hienostuneen vivahteikas ja pehmeän makuinen keitto maistuu alkuruokana vaikka isänpäivänä tai itsenäisyyden juhla-aterialla. Tyylikäs prosecco täydentää aterian juhlavuutta kuohuillaan ja raikkaudellaan.

Sienirisotto on riisin, sienten ja viinin toimiva liitto

Sienikauden loppupuolella on aika päättää Viinimiehen julistama viinikilpailu, jossa etsittiin oivaa viiniä tattirisotolle. Kaksi parasta viinivalintaa, valkoinen ja punainen, kilpailivat loppukilpailussa kahden armoitetun viinimiehen, Askon Imppolan ja Mikko Niemen suositusten kesken.

Kermainen, kostean täyteläinen risottoa tarjoaa nautinnollisen makuelämyksen. Hyvät raaka-aineet ovat onnistumisen lähtökohtana. Sienillä, sipulilla ja pähkinöillä saadaan ruokaan vivahteikkuutta. Risoton rakenne tasapainoilee irtonaisuuden ja puuromaisuuden välillä. Mehevän risoton salaisuus on riisi ja kaksinkertainen nestemäärää riisiin verrattuna. Sienten liotusvesi ja valkoviini ovat osana tämän risoton makuja.

Tattirisotto:
salottisipulia
kuivattuja herkkutatteja
vettä sienten liotukseen
voita
oliiviöljyä
valkoviiniä
parmesan juuston lastuja
tarvittaessa hieman suolaa
pähkinöitä, mantelia, pinjansiemeniä

Liota ensin sienet vedessä. Ota liotusvesi talteen. Paloittele salottisipuli sekä sienet. Kuullota kattilassa ensin salottisipuli voissa sekä pienessä määrässä ruokaöljyä ja lisää sienet joukkoon. Lisää sekaan riisi ja anna kuullottua kunnes se muuttuu lähes läpinäkyväksi. Kaada viini sekaan, jolloin osa siitä haihtuu sihahtaen, mutta jättäen aromikkuutta risottoon. Lisää sienten liotusvesineste kuumennettuna, jotta riisin kypsyminen jatkuu nesteen lisäyksen jälkeenkin. Käytä riisin sekoittamiseen muovista tai puista lastaa, jottei riisin rakenne rikkoonnu hiertämisen yhteydessä. Hämmennä riisiä kypsentämisen aikana, jolloin riisistä irtoava tärkkelys tekee risotosta kermaisen pehmeän ja lusikoitavan kokonaisuuden. Lisää lopuksi parmesaani sekä voi kevyesti sekoittaen riisin sekaan ja anna makujen tasaantua viiden minuutin ajan ennen tarjoilua. Juusto ja voi antavat makuun suolaa, joten välttämättä lisäsuolaa ei tarvita. Lisää juuri ennen tarjoilua kuivalla pannulla paahdetut mantelit, pähkinät tai kuivatut siemenet.

Makutuomarin osa vetää ruoan ja viinin osaltakin vakavaksi. Kuitenkin ihan turhaan, sillä syöminen on iloinen asia ja risoton kumppaniksi soveltuvat niin hedelmäiset valko- kuin kevyet punaviinitkin. Viinimieskin jättää viinien paremmuuden itse kunkin omaan harkintaan ja mieltymykseen.

Sienirisoton makumaailma on hienostunut. Sipulit antavat makuun aromaattisuutta ja sienet, viinien todelliset makukumppanit, tuovat makuun täyteläisyyttä. Yhdessä ne täydentävät ja korostavat makujen harmoniaa. Viini, valkoinen tai punainen, on osin kiinni maustamisesta ja ennen kaikkea maistajan suusta.

Mikko Niemi perusteli omaa punaista viinisuositustaan seuraavasti:
”Hei,suosittelen viinivalinnaksi italialaista keskitäyteläistä ja jopa hieman puolukkaista Pasqua Villa Borghetti Classicoa. Siinä on mukavaa karpaloisuutta ja puolukkaa.”

Winter is here, surprising once again

It is nearly every year same thing. First snowfall comes suddenly. Still it is allways true, winter comes sooner or later.

Grey landscape and unspoilt surface of snow have special impact. Nice start for a first day of winter time.

Apple trees are prepared also for winter time with protective nets against animals. Welcome winter!

Talvi on täällä ja yllättäen, jälleen kerran

Näin se käy lähes joka talvi. Lumentulo pääsee yllättämään, vaikka talven tulon merkit ovat tiedossa. Silti aina jossain vaiheessa se tulee, se talvi.
 
Ulko-oven aukaisu aamulla ja koskematon hangen pinta paljastaa kauniin totuuden. Yöllä on satanut uutta lunta kymmenen senttiä. Hieno alku päivälle.

Omenapuukin on saanut suojansa, kiitos Eevan. Nyt ovat jäniksetkin tervetulleita pihapiiriin.

Asturias’s nature, history and gastronomy speak for themselves

Modern travelles do everything to gain their goals. They are ready to put efforts and some money to experience something new. When travelling people want to have countervalue for their sacrefices. In Asturias all that is possible. Hole province is new capture to most of the people. There is a lot to see and experience within a proper distance. Nice weather throughout the year, reasonable price level and friendly people are also rewards for a traveller.

Asturias is a province of natural beauty.

Nature calls for a visit
Nature is inseparable part of Asturias. Its beauty streches from Cantabrian sea level to high mountains of Peaks of Europa. Landscape and its diversity are totally different with those two parts of province. Still all regions of the territory can be reached within a few hours. Which is a benefit for them who want to spend one day on a beach and another on the mountains.

Llanes is one of the picturesque fishing villages on Eastern coastline. It is remembered about Agustin Ibarrola’s painted concrete ”Cubes of Memory” which are laying alongside breakwater. Small piece of sandy beach just in coastline reflects best one of the attractions that draws people to Llanes. Shelttered place surrounded by cliffs in Playa de Puerto Chico is a perfect place to lay down in the sun and spend a break.

Sotres in the last post of civilization in the eastern extreme of the province. Here you can find the high mountains peaks near 2600 meters that belongs to the Peaks of Europa. Sotres is famous for its agricultural identity and above all for its famous and inimitable blue cheese, Cabrales. Sotres is many times also starting point for people who like to wander, hike, trek or climb mountain. Morning sun lightens the top of the peaks and shows the long and rough road between the peaks and the village.

Central part of Asturias in Teverga and its nature shows also green light for tourists who are seeking for mild terrain to walk, bike or canoe. The tourism is based on the area’s beauty and is also passable for the little ones of the family. The scenery is paintinglike, where green forests are essential part of the terrain. On the slopes of the mountains there are also small settlement where people live with agriculture and tourism.

History is living past
It is justified to say that people in Asturias are living in the middle of past and modern era of history. Everything is guite close so you can familiarzise yourself with common core of human history in one day. One can peek to late Paleolithic testimonies, Pre Romanesque Art and near history between the end of 19th century and first quarter of 20th century. And todays life, being history tomorrow, can be seen on villages and cities every day!

Tito Bustillo Caves take you to trip to Stone age, to time between 35.000 B.C. ─ 10.000 B.C. The Ardines Range of hills in the village of Ribadesella had covered its historical seagrets over time. Fortyfive years ago, in 1968, on group of local mountaineers abseiled and explored the gaves and the main gallery. They discovered staggering paintings on the wall from the ancient people. Findings have been organized into eleven different groups, contaning engraved and painted representations of animals and figures. Horse’s head in Main Panel is the latest painting and it so natural, living and fresh. It transmits the feeling that it was painted recently, although it dates back to 10.000 B.C.!
  
Santa Maria del Naranco symbolizes proudly Pre-Romanesque monuments which date back over 1000 years. This remain belogs to group of six monumets that are on the Worl Heritage list reminding the origin of the Kingdom of Asturias. Massive rocky building unites past history to modern time and is watchin over Oviedo down in the valley.

Laboral, City of Culture, is a huge architectonical complex from near history in the city of Gijon. Starting in 1948 it counted classrooms, workshops and farm among others. When time passed its focus was transformed and converted into constantly transforming cultural city. Nowadays it is home for promoting, training, culture, artistic creativity and fun. Several groups are visiting the centre and admiring its extraordinary outfits, like 130 meters high Tower and the Church beside it.
 
The house of indianos is spectaculas and extraordinary example of the time when life was in transition time during industrialaziation. Many Asturian people emigrated to America for better life and after work or because of other reasons. When coming back those people, the indianos, wanted to show their success and financial status by building a house that emphasizes their achievements. A palm three belogs to the context.

Gastronomy is a treasurebox
Sitting in a table to eat in Asturias is same as opening positive Pandora box. Before the serving starts you can prepare yourself for tasty surprises and forget your timetable. Who wouldn’t like to go through hole menu, where incredients are local, fresh and implementation is decorative both savory.
 
Tasting of Asturian cheeses in restaurant Quince Nudos in Ribadesella gives a representative sample about variety of tastes. Afuega’l Pitu Rey Silo as white and reddish with paprika is quality start for tasting. When continueing with Casín del Viejo Mundo you can feel the strongness and excellence in your mouth. Last but by no means least is the jewel of Asturian cheeses, namely Cabrales de Teyedu. This blue cheese is personal, mix of cow’s, lamp’s and goat’s milk, the colour and aromas are totally integrated with elegance and nuance.
 
Restaurant Del Arco in Oviedo offers a meeting on a plate with piece of essence in Asturias. Fabada, Asturian bean soup in real symbol of the county. It simplifies what is solid, cost worthy and still nourishing to have enough strength. On a plate you will have certified beans with fatty pork, chorizo and morcilla sausages cooked slowly together. In Del Arco serving is carried out with style, camly and respecting the food and client.

Restaurant Auga El Puerto on Gijon shows how simple, fresh and tasty a dish, hake on the hook, can be. You can imagine and nearly see the breakwater where the hake have been fished for. That’s why it is so fresh and has so delicate aromas. Smoothness that you have on fork naturalizes why Auga El Puerto have got one Michelin star!
 
Game starts with cabrito and game! In Asturias meat is essential part of the cuisine. When travelling on mountains you will propably have kid goat on a plate or some times wild boar in restaurants like Casa Cipriano in Sotres or Aladino in Teverga. In any case the dish will be served plainly with potatoes and some vegetables. Long stewing and preparation time generates softness and richness in nuances with the aromas. With wild boar and kid goat you can taste the result and the difference of meat structure.

Be Asturian, taste cider. Cider is vivid trademark that is present every where in Asturias. It is sold by bottles, meaning that nearly 36 million bottles are poured in the province with small individual serving, culin. You raise your arm high up and let cider drop to glass that in down wating in your hand. During the fall cider integrates with air and gets some oxygen and spirit. Cider is must with many Asturias dishes. In Tierra Astur cider house in Aviles cider is way of life.

Viinimiehet Västinniemellä

Viini ja ruoka ovat itsestäänselvyys niitä arvostavien kohdalla. Viikonloppu Västinniemellä, Juicen kaupungissa oli rakennettu näiden perusasioiden ympärille. Kokonaisuutta täydensivät erilaiset aktiviteetit ja syventymiset aihealueeseen, kuten viinitasting, tuulastus, savusauna, lipun nosto, lihan savustus ja ateriakokonaisuuden tekeminen.
 
Viini-ihmisten kokoontuminen alkoi kuitenkin varman päälle Kuopiosta. Ravintola Sampo ja sen muikkuannokset varmistivat kalan makuun pääsemisen, jota perinteinen muikkukeitto tarjosi yllin kyllin.

Mitäpä viini-ihmisten kokoontuminen olisi ilman kuohuvaa. Tanskalainen Rasmus Palsgård näytti miten kuohuviinipullo aukeaa sabragella.

 
Joutuvat ne ammattilaisetkin hieman miettimään mitä lasissa on. Ei se niin helppoa ole kun pullo on peitetty, tuumasi Janne Suomi.

Savusauna on Västinniemellä itsestäänselvyys. Se on hyvä laittaa lämpiämään hyvissä ajoin jo päiväsaikaan.

Öiselle kalareissulle on hyvä hieman tankata. Iisalmelaiset eväät, Olvi ja Taipaleessa valmistetut makkarat, sekä omatekoinen perunasalaatti, pitivät huolen että airon ja atraimen varressa riittää puhtia. Paikalliset kalastusammattilaiset, Seppo ja Raimo Vinni, toimivat saaliin takuumiehinä.

Siinä se sitten on, öisen tuulastusretken kohokohta, hauki. Tokihan öinen tunnelma, veden liplatus, usva ja revontulet tarjosivat oman osansa, mutta kalan jahtaaminen atraimella loi kyllä oman jännitteensä. Tosin oli kyllä muutakin jännittävää, katso http://www.youtube.com/watch?v=pPq0lCWHzVg
 
Suomen luonnon päivä sattui sopivasti viini-ihmisten kokoontumiseen, joten se oikeutti lipun nostoon.

Ruoasta kiinnostuneet eivät joutaneet pitkään lepäämään, varsinkaan kun lähistöllä Tuusniemen savustamossa oli hirven ja lampaan lihaa savustumassa.

Raimo Vinni, hirvimies viimeisen päälle, itseoikeutetusti leikkasi ensimmäiset siivut hyvin marinoituneesta ja useita tunteja savustuksessa olleesta hirvenpaistista. Myös hirviviini sai metsämiehen nyökkäämään hyväksyvästi.

Tässä vielä lopputulos, jossa kylmäsavustettu lohi pääsi täysjyväleivälle kermaisen kastikkeen ja kukkien kanssa!
 
Illan juhla-aterian yksi osa oli muuripadassa entrecôtesta kypsynyt rosvopaisti, joka odotti Syrah-viiniin tutustumista.
 
Tämän maukkaammin ja tyylikkäämmin ei ateriaa voi päättää. Kiuruveteläisen Arctic Milkin vuohenjuustosta valmistettu leipäjuusto sai tanskalaisessa käsittelyssä uuden ja innovatiivisen esillepanon.

Slow living and high tastes viikonvaihteen tavoitteet toteutuivat hyvin oheisen menun ja ohjelman kautta.
 
Sandels piti huolen ettei jano päässyt yllättämään savusaunassa ja toisaalta tarjosi mahdollisuuden oluttastinkiin.

Marching in Murcia with Monastrell



Murcia presented itself as a homeland of Monastrell for Finnish wine people. Murcia, the land of nearly 3000 sunny hours in a year has great deviation concerning climate, food and wines. There are three different D.O. wine areas in Murcia, namely Bullas, Jumilla and Yecla.

Many times you start you wine excursion by familiarizing yourself with the wines made of grapes cultivated in the region.
Murcia has typical Mediterranean semi-arid subtropical climate, where summers are hot and winters mild. In the whole area you suffer water, because you have approximately rain some 300 ─ 350 mm/year. The rain falls mainly in April and October. On the coast temperature stays in the winter time near 10°C, while in inland it drops easily under 6°C, especially at high attitudes. The soil differs a lot even on same area, not to speak with the whole Mucia area. All this explains the complexity, concentration and differences with the wines.
  
Bullas is youngest in denominations but by no means indifferent
Bullas lies in the middle of the Murcia area in South-East corner of Spain. It is an age-old vinicultural region that has long history and tradition in winemaking. At the moment there are 14 wineries in the area. One could say that the future develops with the traditional old winemakers mixing with the returning young winemakers. Export on wines have increased considerably and the future is promising.

In Bullas vineyards are located in the sunny highlands between altitudes of 400 ─ 800 meters. Often the vineyards are surrounded by mountains and high hills. This generates the circumstances very demanding and rewarding for the vines. Principal red grape is justly Monastrell and Macabeo with the whites. In Bullas one can find original phylloxera free roots for the wines because of the dry limestone soil.

The Bullas D.O wine area is divided into three different geographical sub-zones. On the same area the soil, the terroir, can vary and make microterroirs in different parts of the vineyard depending of the location of the parcel.

Old mosaic handicrafs on the wall of the concrete wine tanks in Bodegas del Rosario shows the history of vine cultivation in the area. Focus is primarily on the Monastrell red grape variety. Harvest time begins normally at the end of September or in the beginning of October.

Bullas is traditionally the province of red wines but one can find there interesting rose wines made of Monastrell.

The early morning light revels best the picturesque and ancient shape of Cehegín, town that was found some 2000 years ago.

Jumilla dominates the production and exports
Jumilla, the biggest D.O. wine area in Murcia, lies on the North West corner of the area. There are over 40 wineries in Jumilla, many of them cultivating organically. Due to the hot and dry climate and red-brown topsoil over the limestone organic winemaking have bigger and bigger impact with the wines. The wineries had a new start in 1989 when there were a late phylloxera attack in the area. New plantations in vineyards broadened the variety of the vines and made the wines lighter but still maintaining their fruity characters.

Typical scenery in Jumilla where the vineyards are on high altitude, between 400 ─ 900 meters, surrounded by mountains. Many times sandy and stony soil allows to grow vines called “pie franco”, e.g. European root.

There are always skilled winemakers behind the quality wines. Joaguin Galvez Bauza is one of the newcomers settling down in Jumilla. In addition to his vast experience around the wineries in the world he has the touch for the winemaking. He emphasizes that grapes are essential for the wines and winemaking is art and technic. He is not in a hurry the start the harvest. He tastes the grapes until they are ripe enough to be picked up. Joaquin points out one danger during the vine growing, hails. They may blow up the whole crop in a glance. That’s why one ought the spread the cultivation to different parts to avoid total destruction.

Most interesting sips of the wines one can taste with the barrel samples like in Bodegas Juan Gil.

Sweet products one of the interesting wines in Jumilla. Hacienda del Carche has his own specialty that one wouldn’t expect to find in Jumilla. That is the red eiswein esCarche, made of Monastrell grapes in Jumilla. Wine is made of overripe and frozen grapes which were hand-picked in the early mornings of November. Meaning that temperature is between -5 ‒ -8 degrees Celsius, the water in the juice is frozen while the sugar is not. With frozen grapes there will be a lot of concentration and sugar content is really high. In the winery grapes are pressed immediately, while they are still frozen. The result of juice must is extraordinary and there is a profound concentration of sweet fruit. Fermentation is long and slow process, where sugar turns into alcohol. It is stopped when the alcohol does not allow to continue with the fermentation process. Result, ice wine, is unique one having great balance between sweetness and acidity. Mostly ice wine has high sugar level and less alcohol.

When wines are combined with the food the combination is perfect. Original paella makes nice match with Monastrell wines. It is a triumph of colors and aromas!

Yecla is traditional wine area
D.O Yecla is in the North-East corner of Murcia, and there are classified wines produced under 7600 hectares of vineyards. There have been a slow revolution when making the wines. New technology and equipment have been installed. Yields of the grapes have been lowered. All this means better quality, more concentration and better sales. Wines are creative, complex and rich nuances in the glass.

The vineyards are located on terrain at between 400 and 800 metres above sea level. The climate is in Yecla is continental, with cold winters and warm summers. El Espinal vineyard shows typical milieu where the vines are groving. The plain is vast and brown, sky in so blue that it dazzles your eyes. Mesa is surrounded with high brown mountains far away, and one can really smell the earth.

In the countryside you can see the smokes when growers are burning branches of vines. It tells about the ongoing work that must be done in the vineyards for the vines and harvest. That reminds you of being on an area where living is deeply embedded in wine-growing tradition.

 
Also the traditional ”country side” breakfast Gachasmigas is part of the tradition that you can meet in vineyards. This plain dish is cooked on a fire place and enjoyed with nice fresh Raf tomatoes and green olives. And of course with sip of local wine. 
  
On a winetour you may sometimes meet old winemaker, like Ramón Castaño Santa. Ramón Castaño appreciates his roots. His relationship with the vine cultivation and winemaking dates back for many generations. Ramón acquired his first own vineyard in 1975 in Las Gruesas in Yecla and it was in 1980 than the first wines were bottled. After that Now his three sons have taken the lead and Ramon is slowing down. With the business, but not the wines.

 What is wine tour with professionals if there is no special tasting involved. Tasting is a good way to sum up the essence of different wines. Clean table before the start!

Monastrell is a thrill.
Monastrell grape is characteristic of Murcia and is an autochthonous variety of this Designation of Origin. It arrived over 2500 years ago to Murcia from Near East. After that it has spread out to France, known as Mourvèdre, USA and Australia, where it is known as Mataro. Monastrell has beautiful, dark color and intensive, complex aromas. Fruitiness is strong and acidity lightly soft. Grape is guite high with alcohol level.
