
The Christmas Plate suits many occasions: office holiday parties, Christmas lunches, busy seasonal days, or as a simple yet comforting festive meal for one. It brings together the classic flavours of Christmas; slices of ham, caramelised swede cubes, braised red cabbage with red onion, a creamy funnel-chanterelle sauce, delicate “potato snow,” and a glass of Christmas red wine.
Braised Red Cabbage with Red Onion:
600 g red cabbage
1 red onion
2 apples
Rapeseed oil + butter
Syrup
Salt
4 allspice berries
4 whole cloves
Shred the cabbage, chop the onions, peel and dice the apples. Sauté the cabbage lightly, then add the onions, apples, and spices. Let simmer for about an hour. Finish with a splash of lemon juice to keep the colours bright.
Caramelised Swede Cubes:
1 small swede (about 500 g)
Butter
Rapeseed oil
Light syrup
Salt
Peel the swede and cut into 1 cm cubes. Sauté in a mixture of butter and oil until lightly browned. Add salt and syrup, then allow to simmer until fully tender.

Potato Snow:
Floury potatoes (one per person)
A pinch of salt
Butter
Wash the potatoes and boil them in their skins until tender. Halve the potatoes, then place them cut-side down in a potato ricer—or press the soft flesh through a sieve using a spoon. Press directly onto the plate without mixing. Sprinkle with fine sea salt and finish with a few thin shavings of butter.

Antiche Terre Amarone della Valpolicella Mezzo Monte is like Santa Claus himself—strong, rich, refined, full of surprises, dressed in red, and timeless. Its unique nature stems from a traditional and meticulous winemaking process. All grapes are hand-selected. Picked in September–October, they are dried until early the following year. The raisin-like grapes are pressed, and the juice ferments for several months in large open oak vats. The wine is then transferred to oak barrels for a second fermentation, intensifying its colour, aromas, tannins, and alcohol. After ageing for several years, the wine emerges powerful and complex—wonderful on its own and a truly memorable gift.
